Meanwhile, in a large stockpot or saucepan, heat the ghee or coconut oil over medium heat. Add the ginger, turmeric, and parsnips. Sautee for 5 min. Carefully pour in broth and 1 teaspoon salt. Bring to boil , then lower heat and simmer until parsnips are fork-tender, about 10min. In a blender combine the roasted carrots with the parsnip mixture and apple cider vinegar. Puree until smooth, adding more water or stock as necessary to get your desired consistency.
